Do you have a source? Usually commercial businesses do adult, kids, elderly, disabled, veteran, etc

Well, a person should pay for what they identify as. If you identify as a man, pay the man fee, if you identify as a woman, pay the women fee. If not, then just pay the fee for what you were born as.

In practice, you don't seem to have a good example of any commercial business offering different rates for men and women. They do exist, but the fact that you don't have one suggests you are really asking a different question. In theory, if you are a man, you should pay what the fee for a man is. Combining fees because you have an ambiguous gender doesn't make sense. That would suggest you are both which is impossible.
