My teacher tried to correct my Spanish even though she doesn't speak it. Now, I am going to get back at her by writing my ELA assignment in Spanish. What should I write the poem about?

getting revenge is not always the best way to fix problems, so you may want to think carefully about this. Do you have certain choices for your topic? It could be about something you care about a lot, or something in nature
it not just about her correcting me it is cuz she hates Mexican people she believe's that they're ruining this country

why don't you just write a spanish poem and then do the poem in english so you have a spare?

Yeah i was thinking the first one was a good idea but then you might get a 0 cause of the language used. Honestly you'll lose her at some point so don't let her bother you too much. Good luck on the poem though! ✨

I recommend choosing a topic that genuinely interests you and expressing your thoughts and feelings in a thoughtful way, regardless of the language. Writing from the heart is often the best approach. (Well, Sometimes.)
