If I have one bachelor's degree, the apostrophe is used correctly. If I have two undergraduate degrees, is it "bachelor's degrees" or "bachelors' degrees"?

I would go with "bachelor's degrees." We aren't talking about multiple bachelors - the word "bachelor" is being used as an adjective to describe the degree. At least in American English, we'd maintain the singularity of the adjective (think "drug gang" in US English vs "drugs gang" in British).
