y = a(x-h)^2 + k
along with h = -2 and k = -2 to get
y = a(x-h)^2 + k
y = a(x-(-2))^2 + (-2) ... Plug in h = -2 and k = -2
y = a(x+2)^2 - 2
1 = a(-1+2)^2 - 2 ... Then plug in x = -1 and y = 1
1 = a(1)^2 - 2
1 = a - 2
