what is the correct way to write a comparison of five-eighths and one-eighth?

5/8:1/8; reads "ratio of 5/8 to 1/8" and translates into (5/8)/(1/8) which if we follow the rules of fraction division: You flip the latter fraction and mult. so it becomes (5/8)*(8/1)=5. Hope that helps...
