They're just a setup we use in mathematics. It's easier to do a whole bunch of mathematics on an abstract system than to do the same mathematics on a whole bunch of supposedly 'different' systems.

For example, polynomials under addition and scalar multiplication form a vector space, as do matrices. On the face of it, they look like completely different things, but, in terms of the axioms for a vector space, they're not.

Consequently, all the mathematics we worked out for abstract vector spaces can be immediately applied to both systems.
