"When more molecules of a liquid return to it, than escape from it, what is said to be happening?" I think it is condensing but should it be a gas molecules instead of liquid?

No; liquid is correct. When a liquid is in equilibrium with the gas above it, there is an equal number of molecules escaping the liquid as there is entering it. However, during condensation, the rate at which gas molecules become part of the liquid surpasses the rate at which liquid particles escape to become gas molecules! When this happens, we say that "condensation" is occurring at the surface of the liquid.
