How cam the many cells in an individual be very diffrent from one another, eventhough they are all descended from a single cell and thus have essentially identical genetic instructions?

All cells contain every gene, but as a cell differentiates (for example a skin cell) it "shuts off" all genes unrelated to being a skin cell. Stem cells are cells that have not yet shut off their genes yet.
