Okay, so you're going to have 2 functions, one of them is going to have 1+h substituted in for x and the other one is going to have 1 substituted for x, and it looks like the whole thing is divided by h. Substituted, your expression should look like\[((h+1)^{2}-5(h+1)+1-1^{2}-5(1)+1)/h\]Cleaned up a little, you should get\[(h^{2}+2h+2)/h\]
