if electrons move from _ to +, then why does putting two cells together in series double the voltage. surely all the electrons from one goes directly into the other without moving around the circuit ?

If you wired the batteries in series with eachother, that would happen. However. If you wire the positive of one to the negative of another, and leave the negative and positive terminals of each battery open to the circuit, you have effectively doubled the potential difference. If you think about potential energy, it is like doubling the height of a ledge to get twice the kinetic energy at the bottom.
