Can someone tell me how matrix operations can be undefined? Or considered undefined? :)

One example is matrix addition. Matrix addition is only defined if the two matrices are of the same exact size since each corresponding component is added to form a new and final corresponding component matrix addition is undefined if the two matrix sizes are different

Another example is if you need to take the inverse of a matrix. For a matrix A, its inverse is defined as \[A = {1\over \text{det}(A)}(C_{ij})^{T}\]so if the determinant of A is zero, the inverse is of course undefined. A bit more complex than jim's example but there ya go
