It depends on the enzyme, certain enzymes function better in different pH levels. For example, pepsin (found in the stomach) functions best in an acidic environment; which the stomach provides. http://www.worthington-biochem.com/introbiochem/effectsph.html

Denature = distruption of the structure of the protein (secondary, tertiary, and quatary). The non-convalent bonds such as hydrogen bonding, van der waals, hydrophobic effect, and ionic bonding.

It could be high pH or low pH...... can distrupt peptide interactions.....
