Adaption of bacteria to the presence of antibiotics through the development of resistance to the antibiotics over successive generations. Super-specialization of higher order organisms into niches in the environment. Fossil and genomic records of changes in our own physiology in the past 500,000 years.

the simplest evidence to evolution itself would be the endosymbiont theory, readable on wikipedia.

endosymbiont theory is a good indicator, but it isn't really the "easiest" to note. Really, the theory of evolution is simply this: "The frequency of allele distribution within a given population is variable." And one of the easiest ways to show that is to just look at any given person with more than 1 child. If the children aren't genetically identical twins (which is a trivial case); the children will not be identical, and thus their specific phenotype will not be easily replicated. And then it's proof by induction to show what happened in previous (or future) generations.
