if a wound overwhelms the clotting mechanism and leads to serious hemorrhage and drop in blood pressure, what compensations does the body have to defend cardiac output?

A lot of blood is 'stored' in the liver's venous system. The body's first way of compensating for blood loss is to take some out of that reserve. If the blood loss exceeds that reserve, then blood pressure will fall and the heart will increase. Here you have to start distinguishing between the effects of fluid volume loss - just plain plasma - and loss of in oxygen carrying capacity in terms of lost red blood cells. The fluid loss can to some extent be compensated for by transfer of fluid volume from other systems into the circulation, but new red cells take longer to make...
