Can anybody explain hermitian conjugates in something I can visualize/model?

You shouldn't think of it that way, think of it as the complex analogue of the transpose matrix in real spaces, this makes sense as the transpose provides the adjoint of a linear transformation on a finite dimensional real Hilbert space whereas the Hermitian conjugate provides the adjoint in the complex case.
