They get oxidized....... in glycolysis (the first part of both things you mentioned) you take a glucose molecule (a 6-carbon structure) and you make 2 pyruvates (pyruvate is a 3-carbon structure). Then continuing with cellular respiration you'll further oxidize your pyruvate into carbon dioxide, a 1 carbon structure.
