Isn't it just 1/(s-1) one because 1 is the number in front of x.

It could be - but is there any particular reason it's s-1 instead of s+1

It is always s - the number in front of x. For example, if you wanted the laplace transform of e^-3x, then it would be 1/(s--3), which is 1/(s+3), then it would be positive.
