In Glycolysis my textbook says that fructose 6-phosphate is written as Fructose 1-P, is that right???

No, F-6-P. The number represent where on the molecule the phospohor chain is bound, therefore changing the number would change the molecule. You might be thinking of Fructose-1,6-Biphosphore, which is written F-1,6-P

No-look carefully at the structure of the molecule and check the numbering of the carbons.
