The small intestine is where the body absorbs nutrients and fluids that it has already digested in the stomach and upper digestive system. So if you took a piece of the small intestine out (which often happens when it is diseased), you would decrease the amount of surface area for absorption to occur across and you would also decrease the time that food spends in the small intestine.
One very specific nutrient I'd watch WRT SI removal or disruption of function: B12, also known as cobalamine.
