What's the difference between the way polysaccharides like glucose store energy and ATP?

The difference is in the type of bond in which the energy is stored. In ATP, the energy is primarily found in the high-energy phosphate bonds (P-O bonds). In glucose, it is found in several different kinds of bonds (e.g. C=O, O-H, etc).

Yes. The energy in glucose is used to produce ATP via glycolysis, the Krebs cycle, and the electron transport chain.
