Depends on how much change you're looking for. Delta-y is measurable and has a definite value. dy is infinitesimal and is effectively zero - so you can add dy to something and not change it, but you can also divide by it without technically dividing by zero. delta-y/delta-x is an average rate of change (a slope), dy/dx is an instantaneous rate of change (slope of a tangent line.
