when the 8th amendment says "no person holding any office of profit or trust under them...." what does that mean?

"Office of profit" means a position that can in any way be financially beneficial to the person/s holding the position. For example, if somehow the owner of McDonald's became the president (or the other way around) and outlawed all other hamburger producers. His decision would be called "Office of profit".
Though we have to take into account the aptitude of politicians holding such influential positions, they can very easily sidestep this amendment and twist it to suit themselves. It has happened before, and still does.

A 'trust' is an organization with specific goals, run by a group of people, but can be funded by one or more persons. For example, Bill Gates's charity foundation is a trust, funded by him primarily, but run by the trust (Bill and Melinda gates trust). The activities of a trust can be non-profit or (cut-throat) profiteering, depending upon the goals.
A Government is by definition a 'trust' for public welfare, funded by the public.
