How would I graph -x^2 + 5x -3? Would I have to put it into vertex form, and also, what would the axis, vertex, and domain/range be?

i think the easiest way would be to complete the square..that would give you the vertex, and then the axis, and with a little work, the domain as well

I thought it had to equal 0 to complete the square?

set it equal to 0

and make sure that the coefficient of the x^2 is 1 not -1 what do you get when you complete the square?
