If it's not a physical property, it's a chemical property, and they do change the chemical nature. Examples are pH, Heat of combustion, water reactivity etc

In simple terms, physical properties are what make a substance change its "physical appearance" hence the word "physical property". All of those choices are factors that can cause a substance to change its form/structure.

For example, if you melt something, say cheese to a desired temperature, it would change its form and become deformed. That should give a basic idea of what physical properties are.

An example of a chemical change would be burning the cheese :P In that case the chemical property is flamability or heat of combustion :)
