So, first off, almost every character in Canterbury tales is a satirical commentary, with like one or two exceptions. Since I'm assuming you only read an excerpt, it would help for me to know whose sections you read... However, I can give some vague help: Whenever the observer makes a comment about a character (I'm going to use the Priest for my example), ask yourself "Does this fit this character?" There is a section where the traveler mentions in passing that the Priest dislikes to be around sick or people - at that moment, you need to ask, does this fit who the character is claiming to be? (Hint: almost everything a character tells you they are in Canterbury tales is false. The Priest claims to be a godly man who is charitable. Is he? Nope.) That is a satirical commentary. Hope that helps a little. Mainly, I would just read the traveler's naive observations of the people, and focus on those to find satire. Good luck.
