um it goes brownish shade because of the microbes

the fruit rotten, that's how i think the color changes. once microbes invade a certain food, the color changes

Its due to hormones in the plants that grow the fruit...specifically ethylene. Its a hormone that is released to decompose the plant cells....ripening of fruits, bruises etc...its why the leaves turn color in the fall. The pores on the leaves called somata detect the outside environment and send a signal to plant via signal transduction pathway that eventually responds by degrading chlorophyl in the leaves, storing glucose etc resulting in the leaves to change color and eventually fall off and prepare for the cold winter...Its the same concept for fruits.
