How would I write this equation in vertex form? x^2-14x+45

Complete the square. Remember that vertex form is y=(x-h)^2+k. Do that by getting this to (x-7)^2 + (something). But remember that whatever you add inside your parentheses needs to be subtracted from that +45.

... to clarify, when I said 'inside the parentheses', you'll have (x^2 - 7x + [something]). That 'something' is what I'm saying you'll add and then subtract from 45. I hope that was clear! Search for 'completing the square' if it isn't. Good luck!
