could some one explain to me on the reaction of water,invertase and boiled invertase, in breaking down of sucrose to fructose and glucose? please...urgent

invertase is a hydrolytic enzyme ( hydro = water , lytic = to break ) which means that it adds a water molecue to sucrose to split in into fructose and glucose . Boiled invertase wont be able to perform this splitting as the high temeprature prevalent during boiling would have denatured the enzyme causing it to loose its 3d structure , in particular its catalytic site, and thus its normal function. So if you add boiled invertase to a sucrose solution you wont get fructose and glucose,
