acid actually "activates" proteolytic enzymes (by cleaving a segment that masks their active site) these enzymes are called proteases, once active these cleave "peptide bonds" (i.e. catalyze hydrolysis of amide bonds) of proteins into smaller peptides for further digestion/absorption.
