The conversion of proteins into amino acids is known as hydrolysis since it requires water and hence is the opposite of dehydration synthesis. http://en.wikipedia.org/wiki/Peptide_bond DNA synthesis is a dehydration reaction since water is a by product; as is formation of lipids from fatty acids

@ryder133 It may be a bit confusing that a dehyrdation reaction produces a water molecule, but it actually makes sense. You need to look at what happens to your reactants and not the products. If we look at the reactants we see that they lose hydrogen and oxygen to produce 1 or more water molecules, thus the dehydration.
