a) hydrogen Saturated fats are saturated because they contain as many Hydrogen molecules as they can. This means that they do not have any double bonds. Unsaturated fats contain at least one double bond, usually in the cis configuration. The lack of double bonds in saturated fats allows the hydrocarbon chains to be fully extended and pack into a crystal type array. This accounts for the solid, waxy appearance of saturated fats at room temperature. In unsaturated fats, the cis double bonds force kinks in the hydrocarbon chains, interrupting the ordered packing. This results in unsaturated fats generally being oily liquids at room temperature.
