Why are more people using honey today than in previous years? It is cheaper than sugar. It is consistent in taste and color. It provides nutrients.

OpenStudy (anonymous):

Honey In ancient times, honey was called the nectar of the gods. It was the most common sweetener by far. As the centuries passed, sugar replaced honey as a sweetener. But today, some people have gone back to using honey. It provides nutrients, they say; sugar does not. They are right. Honey contains important B-complex vitamins, several minerals and amino acids, used to build protein. Besides, honey has many wonderful flavors, nearly 300 in the United States alone! Honey from alfalfa, for example, tastes minty. Honey from buckwheat has a strong, molasses-like flavor. Honey from clover, one of the most popular flavors, is mild and delicate. It takes nearly two million flower blossoms to make one pound of honey. Commercial honey makers regulate the kinds of flowers to which their bees have access so that the honey produced is consistent in taste and color.
