It is very spot on though as explained by the Wikipedia. The reason we use Greek letters is because it has always been a popular nomenclature in biology. You could just as well say: subunit 1 and 2 instead of alpha and beta chain.

But the biological nomenclature is the one that has won in protein science. But trust me when I say it can still be hard for biologists to understand chemists as the "language" (nomenclature) can be very different.
