I can eliminate addition because it does not seem to be addition. I notice that they are sorta rearranged, so I'm leaning towards substitution. (That was a bad explanation, I apologize)

condensation is simply the combination of two molecules with the production of water as a biproduct
for example when two monosaccharide react to form a disaccharide

substitution is just replacing one substituent usually a heteroatom with another heteroatom (a heteroatom is any atom that isnt hydrogen or carbon in organic chemistry)
