Bicarbonate is basic so it tends to be released more by the pancreas when the small intestine is more acidic (contains HCL). When there are proteins in the small intestine the pancreas releases some protease - which is a digestive enzyme which breaks it down into peptides or individual amino acids, bicarbonate also is released and has an action on proteins. The pancreas releases large amounts of lipase which digests fats into short chain fatty acids or smaller fats, but bicarbonate doesn't really react with fats.
