Based on the sentence and the answers, I'm just going to take a wild guess and say that 'kind' was the underlined word. If that is so, the answer is would be B, predictive nominative. Predicate nominatives are words that are the same meaning as the subject, and carrot is a subject. A carrot is in itself a KIND of vegetable, so, in this context, it has the same meaning as the word 'kind'.
