Enzymes are all proteins, but not all proteins are enzymes. And most enzymes have an ending of "-ase" , which includes "catalase." Technically a protein is a polypeptide. A polypeptide being a linear chain of amino-acids. Usually "protein" is used to describe a biologically useful or active molecule, whereas "polypeptide" can mean protein, denatured protein, artificial polypeptide, etc. Maltose is a sugar that is from the breakdown of starch.
