Why might fatty acids, amino acids, and nucleic acids increase the hydrogen ion (H+) concentration of a solution?

All of these are acids. An acid contains an -OH group somewhere, and when the acid is dissolved, this -OH group can have the hydrogen atom dissociate and so contribute to the H+ concentration of the solution.
