`They find that the surface temperature at one location is 50° Celsius` they are at the surface, ie they are on the ground so when H = 0, T = 50 think of H as x, T as y (H,T) = (x,y) = (0,50) hopefully you can see this is the y intercept

`They also find that the temperature decreases by 7° Celsius for each kilometer you go up from the surface` as H increases by 1 (km), the temp goes down by 7 (degrees C) so the slope is rise/run = -7/1 = -7 m = -7
m = -7 is your slope b = 50 is the y intercept
