The point at which something boils (think about making spaghetti) is the temperature at which your liquid (water) becomes a gas (steam). The bubbles are air bubbles because the water is so hot it is creating gas (air) under the water and the air drifts upwards looking like a bubble until it reaches the surface and pops or deflates because the air is released into the room. If you were to boil a pot of water for an hour the water would keep evaporating until there was nothing left. When cooking, you let the water come to a boil and then, you throw in the noodles...although I get impatient and just throw everything in all at once......
