In WW1, what did the term "mud cruncher" refer to? I think it might have been a nickname for the German soldiers or have referred to infantry, but am not sure.

It meant an infantryman. So you would be correct. In a sentence it would be used like this, "Jimmy, you're too good to be a mud crusher."
