Graph 1 best illustrates the parabolic motion of an object in this scenario. Notice that the velocity components decrease with each interval while going up the parabolic path and then increase down the parabolic path. This is because of the gravitational acceleration that is always directed downward. It is because of gravity that gives the object a parabolic path to begin with and it's because of gravity that the vertical velocity is 0 at the top of the path.
Additionally, what separates graph 1 from graph 2 is the horizontal components. The horizontal velocity is always the same (unless there is wind drag, but that is ignored here). As you can see from graph two, it assumes that the horizontal velocities decrease with decreasing vertical velocity and increase with increasing vertical velocity, which is NOT true.
