When writing out numbers like 32 and 78, you write it like 'thirty-two' and 'seventy-eight'. Same with fractions. 1/4 = one-fourth 5/8 = five-eighths I am not exactly sure on the 'well-known' phrase. I have seen both 'well known' and 'well-known' in many sentences, stories, and articles. I know it has to do with it being an adjective or an adverb/verb Same with 'soft-boiled' and 'hard-boiled'.
It's not the first choice. For numbers 0-10, the correct way to write them is by spelling out the number. After that, writing the number (i.e. 63 and not sixty-three) is the correct way to write it out. I would go with your third choice of one-half.
