Why is vinegar used in food preservation?

by using vinegar we take out bacteria causing water out of the cells using osmosis as the cocenrearion of water becomes higher inside the cell as copmpared to the surroundings. please fan and medal

People soak food in vinegar for preservation of food. This is because vinegar , which has a low pH, will diffuse into the tissue of food, and make the food acidic. Low pH environment prevents the growth of microorganism in food. And the preserved food can last longer. @saksh1998 Sorry for being rude, but I guess you have mixed up vinegar with salt solution ;) It's true that salt solution is another food preservative, and it's a hypertonic solution to lots of food tissue e.g. fish. When food is placed in hypertonic solution, water in food tissue flows out to the surrounding solution by osmosis as cells in food have a higher water potential than that in the hypertonic solution. The food become dehydrated and cells become flaccid. Hence the bacteria cannot grow in the food and their cells shrink.
