I know the answer is -3x^2-x-5 but can someone explain why

You are dividing -3x^3+11x^2-x+20 by x-4. Set your divisor (x-4) = 0 and solve for x. x = 4. x=4 is thus your divisor in synth. div. Now you borrow the coefficients of the polynomial -3x^3+11x^2-x+20 ______________________________ and write the problem (for synth div) as 4 / -3 11 -1 20
