Lactic acid fermentation is a metabolic process by which glucose and other six-carbon sugars (also, disaccharides of six-carbon sugars, e.g. sucrose or lactose) are converted into cellular energy and the metabolite lactate. It is an anaerobic fermentation reaction that occurs in some bacteria and animal cells, such as muscle cells.

The muscles of the human body normally use cellular respiration to breakdown glucose into H2O and CO2, producing energy that is used to combine phosphate groups with molecules of adenosine diphosphate to produce adenosine triphosphate. The adenosine triphosphate temporarily stores the energy released from the glucose, and moves to the right location in the cell to contract the muscle. The water vapor and carbon dioxide are exhaled. The process of cellular respiration requires oxygen as a reactant, and does not produce immediate results. The glucose molecule must undergo glycolysis, the Krebbs cycle, and finally, the electron transport chain. These phases occur in different parts of the cell, requiring movement of the partially broken down molecules.
