Just try different starches and see which one breaks down if at all or the fastest maybe idk i dont biology well

If you do research on amylase, amylase is what your saliva contains which is used to break down starch.
Hmm, for this project, you collect saliva and bread/crackers/starch. Once this is complete, add the saliva with the starch product and mark down the chemical reaction, how long it takes for the starch to break down, and how its appearance changes at the end.
