Because oil has a chemical propertie (I dont know what it is but i think its fat look it up) but what happens when u mix oil and water is the oils properties only multiply

H2O is a polar molecule with a negative charge on the oxygen side and a positive charge on the hydrogen sides |dw:1607320504924:dw| this is because oxygen has more negatively charged electrons in the outer shell compared to the hydrogen atoms Because of this polar molecule, it attracts other water molecules and effectively forces out anything that isn't polar like oils, fats, etc. As a result, the two substances separate and stay separate
