You could define death as the lack of the capacity to experience, since all of our conceptions are based on our sensors and organs relaying us information and keeping us going. What's more than likely is that whatever is beyond death can't be 'experienced' in the way that we might imagine, and instead is something entirely unpredictable.

You can't know until you die. But even when you might die, there might not be anything to know. Who says knowledge exists after death?
