http://cholesterol.about.com/cs/faq/f/difference.htm Saturated fat: mainly from animal source, does not contain double bonds, May increase the level of LDL cholesterol in blood which can cause diseases. Unsaturated fats-mainly plant is the source, Contains unsaturated bonds(double bonds), lowers LDL cholesterol and increase HDL cholesterol(has a protective effect against heart diseases.).

a) Saturated fats tend to be solid at room temperature and an example of a saturated fat would be "lard." Saturated fats have fatty acid tails with single covalent bonds between their carbon chains. b) Unsaturated fats are liquid at room temperature and consist of at least one or more double covalent bonds in their fatty acid tail(s). An example of an unsaturated fat would be vegetable oil. c) Unsaturated fats tend to be the "better" fat in for your body. Since they have double bonds found in their carbon chains, it makes it difficult for the fat to bind and link up together to clog arteries in the body.
